Vinya de Cabra

Parellada planted in 1987 in Cabra del Camp, Alt Camp. The westernmost of my vineyards, and the one for bubbles.

Parellada on clay

Parellada is the most delicate of the Penedès trio: light, floral, low-alcohol wines. That is why I love it for bubbles. Here it grows on clay, which holds water and spares the grapes some of the summer stress.

How I farm it

Biodynamically, with no synthetic products at all. I protect the vines with horsetail and nettle, trichoderma that I grow myself, and preparations 500 and 501. For two years now I have used almost no copper or sulphur.

I prune in winter, remove extra shoots by hand in spring and harvest by hand, in small crates, with friends. Every treatment goes into the field notebook: what, how much and why.

What it makes

Voyage Voyage: direct-press Parellada made by the ancestral method. I bottle it before fermentation ends and the bubbles make themselves. Soft, light and thirst-quenching, at 9% alcohol.
