SANS DOMAINE

I started Sans Domaine without a single row of vines. Today I farm 7 hectares across Penedès and Alt Camp, plus one of olive trees. No farmhouse or cellar of my own yet. But grapes, yes: old vines (the eldest from 1969), no chemicals in the vineyard, no make-up in the cellar.

Seven wines, almost all unpressed: I keep only the juice that runs out on its own (the sagnat). And the exact number of bottles, because there won’t be more.

04 — SURVIVAL GUIDE

Natural wine,
no waffle.

VINEYARD, CELLAR, GLASS →
  • It’s cloudy. Is that bad?

    No. Those are fine lees, grape particles in suspension. Stand the bottle upright for a day if you want it clearer.

  • It’s a bit fizzy. Is it faulty?

    A little leftover gas from fermentation. Decant it, or put a thumb on the neck and shake gently: it calms down.

  • It smells of boiled egg when opened.

    That’s reduction: the wine lacked air. Decant and wait fifteen minutes. It usually goes.

  • Opened yesterday. Still good?

    Often yes, sometimes better. Re-cork, fridge, taste. Your nose is the best judge.

  • How do I open an ancestral?

    Well chilled, and don’t shake it. The first time, open it over the sink: natural bubbles have character.

  • What about sulphites?

    The exact figure is on each wine’s page. No slogans: data.
